It is the caviar of a natural hybrid of Amur and Kaluga sturgeon , a freshwater fish of the beluga sturgeon family (lat.Acipenser schrenckii x Huso Dauricus). This species of sturgeon appeared naturally from the crossing of two species of sturgeon in nature in the habitat of the lower Amur River.
